Any parent packing food for their kids’ lunches knows that finding that fine line between healthy food that doesn’t take hours to prepare and food my kid will actually eat is tricker than quantum physics. The problem is that a lot of kids wants variety, and it can be really hard to keep coming up with new ideas on your own, especially early in the morning. To create this sandwich, layer some mozzarella, tomatoes, and basil on a bread roll, and that’s it! You can also add balsamic glaze or pesto if your kid is adventurous. For more variety, add in some cucumber or spinach, or leave out the greens if you have a particularly picky child.

Italian Sub

If you have both ham and turkey on hand, why not mix things up (literally) by making an Italian sub? Using your kid’s favorite bread, layer ham and turkey slices with salami and provolone cheese. Depending on your child’s preference, you can also add tomato slices, lettuce, and Italian seasoning. Mama mia, that’s a delicious sub.

Avocado and Bacon Sandwich

Here’s a great way to take the classic and beloved avo toast on the go. Add some sliced avocado and bacon to sliced bread. That’s all you really need, but feel free to add some cream cheese, hummus, or even some everything but the bagel seasoning. We won’t blame you if you make yourself one of these as well.

The Ultimate PB&J

It really is high time to upgrade the classic PB&J. While there’s nothing wrong with the original, upgrading is always exciting. You can add a slice of bacon to add crunch and delicious smoky fat. Alternatively, add in chocolate chips, bananas, and strawberries for a real treat. If your kid doesn’t love jam, try to swap it out for some Nutella instead.

What kid wouldn’t love to get pizza bites for lunch? Take some rolls and place them in a baking dish. Sprinkle on some shredded cheese (or a mix of a few) and add toppings. Depending on your child’s preference, feel free to add or omit tomato sauce. Throw into the oven for about 15 minutes. Here’s another one you’ll probably want to have yourself.
